Do you see anything that says “USB”? Make sure to connect the USB device before starting Audacity.
If Windows sees your device Audacity should see it too. Right-click the Windows Speaker/Volume icon. Select Open Sound Devices and check if it shows-up as an Input Device.

It probably won’t make a difference but MME is the oldest standard. DirectSound is newer and WASAPI is the newest.

If that’s one of those cheap USB cassette players they all seem to have bad reputation (all of the brands).
