I am using Audacity 2.0.3 from exe.installer with Windows 7 to record vinyl albums played on an ION turntable.
A few weeks ago I started to get a mono mix despite the input being set to Stereo.
Any ideas?

Try this http://wiki.audacityteam.org/wiki/USB_turntables#Windows_Vista_and_7 to make sure you are recording in stereo to begin with.
I doubt you are recording in stereo but getting mono playthrough but if you are, go to the Playback tab of Windows Sound, right-click over your playback device > Properties, choose “Advanced” tab then ensure a stereo “Default Format” is chosen.

Windows might “think” your USB audio device is a mono USB microphone. Your turntable is connected via USB, right?
I just found something about configuring the Windows Sound Mapper for 2-channel recording on this page.
Thanks Doug.
Does any one still see the weird behaviours those steps were working around, where Sound Mapper - Input would not record on Windows XP when the USB turntable was default, but on Vista and Windows 7, the opposite happened (Sound Mapper recorded but the USB turntable choice would not)?
I think those issues were probably fixed with Michael’s new Device Toolbar in Audacity 1.3.13.
