I’ve read all I can on this topic and there a few complicated solutions, I was wondering if you guys can help me do it easier.
I scour beats and instrumentals all over the internet and freestyle over them, I would like to use Audacity to record these sounds from Windows and be able to freestyle into my microphone with no echo. Is this possible? If I’m wearing my headphones, can the windows sound and my voice be simultaneously recorded in two different tracks?

I’m pretty sure you can record both with VoiceMeeter, but I’m not sure about separate tracks.

The complicated solutions are probably to capture the on-line sound using one of the self-recording techniques:

…and then singing over it once you already have it using Audacity overdubbing. You may want to learn how to do that anyway. That’s how you sing three-part harmony to yourself.
