where can I download a version of FFMPEG for macOS that won’t be rejected by macOS sonoma?
What does “rejected” mean? Is there an error message? If so, what does it say? Are you using a Mac with an Intel or with an Apple Silicon processor?

Audacity uses a special version of FFmpeg so it has to be compatible with Audacity AND your operating system. There’s no point in looking for a different version somewhere else.
When I use FFMPEG 5.0.0 with audacity under macOS 14.6.1, It says “it can’t be verified for malware”, so it can’t be used. When I went to the FFMPEG website, the original FFMPEG for macOS creator specifically said he refused to make a version for silicon macs, so I’ve just been downloading it from homebrew, but it doesn’t have the tools needed for audacity, so where can I find the Sonoma compatible version of FFMPEG?
Try downloading and installing from the link provided by DVDdoug. I just tried it and it worked for me. macOS 14.6.1, M1 Macbook Air.
No, it does not say what you write. It probably says: " macOS cannot verify that this app is free from malware".
It does not mean that the software cannot be used. You could read this article to learn more.
And you should probably follow DVDdoug’s advice from where to download ffmpeg.
