Apple (upper left) > System Preferences > Sound > Output.
These System panels have a volume control in addition to other settings. Does your soundcard have drivers or helper software? If you have a complicated enough soundcard, it may not “look like” a soundcard to Audacity. For one example, Audacity will not play back multi-channel and sometimes if you get the mono-stereo settings wrong the soundcard won’t show up at all.
