Audacity has “Sound Activated Recording.”
Edit > Preferences > Recording > Sound Activated…

I just downloaded it, and all of the settings and available info online can be overwhelming until I learn the software better. You saved me a good deal of time and stress. This software is pretty sweet! I will cherish it always.
