When I mix multiple audio tracks into one, the amplifying doesn’t reduce my overdrive like it used to.

What is the problem?
The problem is that you’ve changed the default bit format in Preferences to 24-bit, so the tracks are mixed down to 24-bit.
To support “over 0 dB” you need to use “32-bit float” format.
“Edit menu > Preferences > Quality → Default sample format: 32-bit float”
