Debian Testing (bullseye) and Debian Sid both have Audacity 2.4.2. Audacity 2.4.2 will be new enough for this. Audacity 3.0.3 is due to be released soon. It contains some bug fixes that "may" help with the slowness problem, but we can't be sure as we can't reproduce the problem. The 3.0.3 version does fix the problem with apostrophes in file names, though "best practice" is to avoid special characters in fil...

That's only relevant to Audacity 2.4.2 and earlier.
Audacity 3.x uses a different project format and does not use .AU files (See: https://www.audacityteam.org/audacity-3-0-0-released/)

The old SoundBlaster cards used to have a "What U Here" option, which was SoundBlaster's version of "Stereo Mix". I don't know if they still have that.
