Thanks guys for all the help it turns out it is a earth problem, i recorded with out the mains cable in and the sound quality was brilliant, just need to buy a new batery now as the one in my laptop last about 5 mins LOL!!

Most laptops tend to have only a MIC input and not a Line-in input. A mic input is expecting a much lower sound level than line-level. So if you are feeding the signal into a mic input then that is likely to be the cause of your over-hot signal. If you do have only a mic in - then you are a candidat...

I would like to be able to listen to the play back, and adjust the EQ live, or on the fly.

You can start by applying the equalizer tool in the "telephone" setting: drop everything below 300 and above 3000. There may even be a pre-baked filter that does this.
Then apply Effect > Leveler about three times at maximum compression.
