I don't know about whether there is a limit to the number of streams, I'm afraid. I see no comment in the code about it, other than a comment that only the first logical stream is opened (which is only still true for Audacity 1.2). If no other programs will read these files they could be corrupted. ...

Do you have the right device selected as the recording device?

You should connect the usb cable and turn on the turntable before running audacity so that it is properly detected.

Which Audacity version are you running? (check in Help menu -> About)
Which Windows version? (XP, Vista, 7...)
