Are you using Audacity 1.3? This sounds like some of the problems we had in Audacity 1.2.
In Windows I think it's Help > About.

Audacity 1.2 is not supported under Mac-OS-X 10.6. Under certain conditions, it won't even launch. Download and install Audacity 1.3 from here and get the FFMpeg from the same place. http://audacityteam.org/download/ FFMpeg should come with its own installer. Do into Audacity Preferences and change the Quality 32-bit floating to 16-bit and see if that doesn't help. Restart Audacity.

Looking at it again, I see how to save the files as the original track name... It was the first option on the right hand side of export multiple screen.
