Another couple of tries and I got it to my satisfaction. Thanks very much for the help.
(Might I suggest - for less savvy users like me - that the vertical zooming section of the manual be updated to specify clicking on 0.0 for zooming in)

Uninstalling and reinstalling Audacity would not help. Audacity is recording two channels but Windows is giving you a mono mix, which is what you have Windows set to (1 channel). Basically if you see a message that stereo mix can't record two channels, ...

... Audacity did something very, very bad -- and then automatically reboots. I tried 2.0.5 Alpha and it appears to function properly. Thanks for your help. ps (I believe I have 2.0.4 as the installer package is in my downloads - but I can't start the installed version to find out :(
