Nyquist Effects do not appear under the effects menu when I open Audacity in Mac OS X. Anybody know why? I can see that they exist in the plugin folder found in the audacity installation folder under applications, but I can't find these effects in Audacity itself. Any help is much appreciated.

Can you post the information from Help > Audio Device Info... top right of Audacity? Then we can see what devices you have. Did you try simply playing to the headset? Do you hear anything ...
