Audacity only supplies source code for Linux. I'm guessing that you installed a binary package, in which case the most likely problem is that there is a problem with the package, such as a missing dependency. If you still need help, restart Audacity, attach the AUP file for the first project file that won't open, then also attach the log from Help > Show Log... so we can see what the errors are.

Repeat the restart of Audacity and as above for the other projects that won't open.
