... poor 8000Hz rate is not being imposed by the conversion software which is extracting the audio. Audacity 1.3 will rip the audio from video if the FFmpeg libraries are installed.

... file to a folder on your hard drive, and double click on the audacity.exe file to launch it. If your encoders (I presume that you mean Lame and FFMpeg) were installed at the same time as Audacity 1.3.12 then I think they should be fine with Audacity 1.3.13.

I just downloaded successfully the very latest 1.3.13 beta, and have also downloaded the Lame and FFmpeg files too. One little question I have is that everytime I open Audacity just prior to the program opening it appears to be searching for Beta plugins, so I assume it ...

I haven't tried this and I don't have a multichannel file handy...

Instead of WAV, select "Custom FFMPEG Export" (I assume you have installed FFMPEG). Then click "Options" and the FFMPEG dialog box pops-up, and you can select WAV, PCM, and other options.

This is the structure of Snow Leopard and it's fairly common. Is it common? FFmpeg installs by default to /usr/local/lib/audacity. That can certainly have permissions problems (and will eventually be changed) but it was your choice to put FFmpeg where you did, ...
