... (Or your ripping program may give you the option to convert from the DVD file structure to another format.) Then using Audacity (with the optional FFMPEG import/export library) you can open the MPEG file and load the audio into Audacity for editing/processing.

... licensing issues that prevent us from including encoders/decoders by default.. However, Audacity is able to use appropriate versions of "FFmpeg" to greatly increase the number of supported formats.
