If you turned on "Software Playthrough", turn it off again (Transport menu > Transport options)

Something that you can try, though it "may" have too much delay, is enabling "Software Playthrough" in "Transport menu > Transport options".

Next time I came to use it to record a voice track, there was a helluva nasty noise when I pressed record. It sounded like a crescendo of delay and reverb etc. on a loop, making it impossible to record anything. ... Any ideas ? ... Try unchecking "software playthrough" in Audacity ...

You can what you're recording, but there will be a delay. To hear yourself while recording you need a microphone or interface that provides audio to your headphone before the audio goes into the computer. To hear what you're recording, go to Transport ...
