First off, Have I exceeded the track capacity of Audacity or perhaps the capacity of my sound card? No, and no. You can scratch those two issues off the list. Audacity has no limit and it doesn't use your sound card to mix tracks. You've also got plenty of computing power in your processor for this....

When you select more than one track and use the Analyze -> Plot Spectrum option, Audacity ADDS the signals together. It does not average them. That's a pretty cool experiment. The "correct" sound card? Who knows? Any card you buy will not have that problem so pick the one you like best. For a bare-bones one that's cheap, the Behringer UCA202 works nicely. I'd bet those extra two channels are listed as a different device. If that's the case, then Audacity won't be able to access it at the same time as the other inputs. But I don't know how the drivers are set up, so I can't say for sure.
