If you're getting a mono recording when it should be stereo, you have to check (at least) two things: 1) Audacity's Edit -> Preferences -> Audio I/O menu has a drop down menu labeled Channels. This should be set to 2. 2) The cable you're plugging in should have 3 conductors to carry a stereo signal ...

Yes, it's quite easy. 1) Add both tracks to the project. 2) Line them up perfectly. In order to do this best, I suggest zooming way in on an instrumental part of the tune (the first note it usually a good one). 3) Once their lined up perfectly, highlight all of one track and select Effect -> Invert....

Have you tried listening to this "silence"? It might actually have the audio in it at a level that's too low to view at the default display settings. Seems unlikely, but it's possible. Was the show unusually quiet compared to other audio clips? Failing that, see if you can upload the show somewhere ...

That is bizarre. Any chance you can upload an example file so we can take a look. For some reason the limit on this board is now 256KB and the file also must be in .zip format (this may have changed, can someone confirm this?).

I think the meters should always monitor the currently selected recording source. It should also be more than 2 channels. There is no reason to have to click on it to get it to start monitoring.

My install of 1.2.6 has it. Use the newest Stable version.
