Are you trying to record at a sample rate that your soundcard doesn't support?
Everyone should be able to record at 44.1KHz, is that what you're using?

It might be coming up at the wrong sample rate. If you're using Windows you can right click on the file and click Properties -> Summary -> Advanced and Windows will tell you what it thinks the sample rate is. Does that match up with what Audacity says? I take it this file plays ok in other software,...

In Audacity's Edit -> Preferences -> Audio I/O menu do you have "software playthrough" checked? That needs to be unchecked to record streaming audio.

In Audacity's Edit -> Preferences -> Audio I/O menu, make sure "play other tracks while recording new one" is checked.

Audacity 1.3.3 can output to surround format, but I have no idea how it works. Open the preferences menu and go to File Formats -> Use Advanced Mixing Options. Re-import the file you've exported into Audacity, does it sound (and look) ok there? If you can play the whole project without lighting the clipping warning light in the Meters then it should output just fine (the end of the meter will turn red if you've clipped the output during playback). Is it just me, or do all the people who have this problem use a USB turntable? This is something we should be looking into.
