Are you using point labels or range labels?

It sounds to me as thought you could be creating short 3-second range labels instead of point labels at the beginning of each song.

The two new effects are basically the same as the old Equalization effect (which had a fair few bugs by the way). We basically split the effect in two and fixed the bugs. In particular the two parts of the old Equalization the curves and the sliders didn't play nicely together. The one thing missing...

Which version of Audacity?

In the latest version 2.3.3 we replaced the Equalization effect with graphic EQ and Filter Curve.

You can select an individual track and used Export Selected Audio.

Or you could use Export Multiple and set it export based on tracks - then each track would be exported to a separate file.

What MP3 player are you using - it may well have some auto-levelling.

In iTunes/iPod/iPad in the Playback preferences you can enable "Sound Check".
