you should have this feature available in 1,2 (my copy of 1.2.4 has it).
Go to Edit > Preferences > File Formats and the topmost box should have two radio buttons which enable you to toggle your preferences between these two modes.

Steve, the PP2 looks a nice piece of kit with good spec. and not too bad a price - and NAD is a good brand - so well worth considering. Audacity OOTB default is set to record in mono. To change to stereo, go to Edit > Preferences > Audio I/O and from the Channels drop-down box select 2(Stereo).
And you may need to close Audacity and restart it for the setting to take effect.

Are you putting WAV files from Audacity onto your iPod? If so then you are likely to run into space problems on your iPod. Most iPod users will either use MP3 (you can export to MP3 with Audacity using the additional LAME software) - or you can use iTunes to convery your WAVs to Apple's AAC format. ...

Inexpensive phono pre-amps can produce surprisingly good results, and if using a budget turntable and cartridge it is probably not worth spending a lot more.
