LPs: If your TT has been mothballed for 10 years, it can probably do with a service before you decide to re-use it. Light oil on the main bearing, check condition of belt (if it's a belt drive). The Fast Forward and rewind icons (like the ones on tape/CD decks) actually move the cursor position to the end or the beginning of the recording.
You can get this from the keyboard with the use of the END and HOME keys.

Yes, you should get the opportunity to edit the MP3 ID3 tags on exporting. I don't know if you are using 1.2 or 1.3 - biut in 1.2 there is a flag where you can set the tag data collection on or off - default is on IIRC)

When most USB soundcards/codecs are plugged in - then Audacity normally hands total control over the signal level to them. So in reality although you may be able to move the Audacity sliders - I actually doubt whether that actually lets you control the recording level (please shoot me down in flames...

I suspect that you are using special characters like / in your filename(s).
I usually make fairly vanilla filenames in Audacity labels and then edit the filenames and metadat tags later, after export.
