You can edit MP3 metadata tags with Windows Explorer - just right click on the file name (or you can select a whole album or group of files) select Properties and edit, the page on the Summary tab.

Headset mics are not ideal - but it's worth a try. Yes you can do this in Audacity. You can record this in Audacity and edit out any glitches.
