Are you using a USB turntable or USB soundcard? If so then I would expect the input selector to be greyed out.

OOTB Audacity default is currently set to mono. Go to Edit > Preferences > Audio I/O and set Channels to 2 (stereo)

Just be careful with the Mute.

In 1.2 Audacity does not honour the mute on export (though it does when you play the project). This is a known bug which is fixed in 1.3.x

Personally I record and edit with Audacity set to 44.1kHz 32-bit floating - and when I export completed projects I export to 44.1kHz 16-bit PCM stereo WAV fles (the CD Red Book Standard).
