That's because it isn't in the Audacity folder. Or you can use the CTRL+P keyboard shortcut to pause and restart recording.
And if you do get two tracks like that, you can always move the second track tto start after the first track by using the Timeshift tool.

should happen automatically when you use Export Multiple as MP3 - it takes the filename and the track title from the Audacity track label

This is a known issue with 1.2.x - Beta vn 1.3.5 md the upcoming 1.4 deal with this better - you get a warning before you can export and must correct the track names before export can proceed.

What's funny to me is that establishing a label via control-m doesn't create an area...it creats a point. Mike, that's because CTRL + M is designed to create a Marker position as you record or playback CTRL + B is designed as the shortcut for creating labels - either as a point label, or as a label...
