try going to Edit > Preferences > Audio I/O and ensure that the radio button for Software Playthrough is checked on. Sounds like it isn't an MP3 - Audacity does this when you try to import filetypes that it doesn't recognize. Audcity can import WAV/AIFF, MP3 and Ogg files (and in 1.3 additionnally FLAC). Any other filetype must be converted to a recognisable filetype (preferrably WAV) prior to import into Audacity...

I'm no expert with this functionality - but my understanding is that you manipulate it similar to the Envelope Tool. Absolutely you can - just be aware that you can't actually run both at the same time.
And more importantly be awre that you can open and edit a 1.2 project in 1.2 but not the other way around. And once a 1.2 project has beem opened/edited/saved in 1.3 then it cannot be re-opened in 1.2.

You can of course edit the metadat after export - you can do this in iTunes for example. I am not a MAC user, but in Windows we can use Windows Explorer to edit the metadata of exported music files - we can select a whole bunch and set common Properties for all - I am guessing that in MAC-land there...
