To change the language use: Edit>Preferences - Edit is the second command in from top left, then Preferences is the bottom selection in the drop-down list. Then you need the Interface tab, which is the third one in from the right. Language is selected from the only drop-down list in the dialogue box...

I think the default sample format is 16-bit for me. Would it make a lot of difference if I upped it to 32-float? What does the sample format say exactly? Only if you've changed it to that - IIRC Audacity OOTB defaults to 32-bit floating 44.1kHz. With the higher bit rate you are using more bits for ...

Go to Edit > Preferences > Devices and change the the setting in the Recording/Channels drop-down - reset this to 2 (stereo)

How did you make the recording - help us out a bit here :) Did you buy any chance import existing stuff from another WAV file or from a CD? Assuming that I have understood you properly and you have created a second stereo track below the first one. If that is the case then you can delete one of the tracks simply by clicking in the little X in the top left hand corner of the track.
