Assuming that you have set your Audacity preferences to work in stereo - then you will see 2 channels in each Track that you create - I assume that this is what you are describing. If however you make a recording and then press Stop, this will create a track with a stereo pair. If you then press Rec...

In 1.2 you can't easily. In 1.3 you can append after stopoing redording and editing with the kyboard shortcut Shift+R

You are probably overloading the Mic input on your new laptop. If it was ok on your previous laptop, then the mic-in on that one was probably capable of adjusting itself to adapt to line level input. Ideally you should be feeding in to a line-in socket, unfortunately - unfortunately most modern lapt...

Also I note that ION sell additional special stylus/cartridge for use with 78s - you really should use one of thos. The sytandard one supplyed for vinyl is not really suitable for use on shellac 78s.

One feature of Audacity that will help you with 78 digitization is the set of Equalization curves for the various RIAA equalizations that were applied by the different manufacturers. You don't say which version of Audacity you are using. In 1.3 try File > Open Metadata Editor in 1.2.x - no idea, I can't find it ... Personally I never bother with metadata (apart from song/track names for Export Multiple) until my music files are exported from Audacity and imported into their targ...
