You can avoid the "frenzy of clicking" by turning off the metadata editor - go to Edit > Preferences > Import/Export and uncheck the box that says "Show Metadata Editor prior to export step" - it's an unfortunate default in Audacity which was done by the developers a whilke back ...

Yes - Audacity is a mult-track editor. We don't seem to have a Wiki feature or tutorial on multi track recording and editing (there was a post about this in the Feature Request section recently IIRC).
