Ah, I see - but am I right in assuming that there is theoretically no difference in audio quality between AIF and WAV?
And further does iTunes handle them both equally in terms of Audio quality?

Yes you do need a label before the first track (this catches a lot of folks out when thet start with Audacity) - and no you don't need one after the last.

I usually export to AIF (complete with metadata), import them into iTunes, let iTunes convert to AAC, then trash the imported AIFs from iTunes. Personally, I wouldn't do anything else on the computer while it is recording. When you plug in a USB device like this your computer hands over control of all sound services to the USB device - both input and output.
