If you are sure that you have exported the first recording (hopefully to a lossless format like WAV) then you can just delete the first recording from the project by clicking in the little x at the top left of the Track Control Panel to the left of the track. Some laptop owners find that they have to turn off mains power an run on the battery to get a clean signal. My Dell Vostro is fine on mains power though.

You are almost certainly in Pause mode. You need to be in Stop mode for the menu options to become available.

That looks like a serious fault with your soundcard. You have what is known as "DC offset" - where DC is being added to the signal. The visual indication is that the waveform is not centred on the zero line. You can correct for this in software in Audacity - immediately after capture, use ...
