In the Export dialog box just click on the Options... button, a pop-up dialog will appear : you will probably want to keep the "Header" as WAV, but click on the drop-down for "Encoding" and from the drop-down you can select 24-bit (or whatever...).

If you export from Audacity 44.1 kHz, 16-bit, PCM stereo WAVs - this is (part of) the Red Book standard for CDs and if you burn these WAVs to a good quality CD-R (NOT a CD-RW) then these CDs should play in all CD players (except those with a dodgy laser).
