Yes Koz is right that you need to pay attention to what is selected , but the quickest way to delete a particular track is to click on the X in the top left hand corner of its Track Control Panel - see: http://manual.audacityteam.org/o/man/au ... html#panel

Personally I would recommend using the Normalize too immediately after capture - but just with the DC Offset Removal and no amplification (uncheck the Normalization check-box in the dialog box). Your Left & Right channels look pretty balanced - if theye weren't that could be a reason for using N...

Audacity should have a way to create track separators on the fly, while listening the LP. I'm not too clear about the difference between such a thing and CTRL + M and ENTER (which creates an empty label)...
