If you want to carry on recording in the same track at the end of it use Transport > Append Record or its shortcut Ctrl+R.

Otherwise to record on a new track starting wherever you want just position and click the cursor and then click the Record button.

Workaround: try plugging in a dummy 3.5mm stereo jack with no cables attached or one that terminates in another plug of some sort. Audacity projects are not really a good format for long-term and archival storage. What I do is work on the project, do all the editing I want/need and then export a 16-bit PCM WAV file (the Audacity default export format). I than make duplicate copies of these on two separate external 1TB USB discs...
