Yes it will lose quality - because when you Export as MP3 from Audacity it will re-compress the files and thus you will get additional compression damage.

There are several metadata editors round that will do this for you without changing the audio.

Where are you finding songs with large volume ranges? Commercial music is usually produced to be as loud as possible and no volume changes at all. Try opera Koz ... It's actually down to the border fences that Apple is busy erecting. Apple now require an app to be "notarized" - i.e. officially approved by them before that app can be granted access to devices like the mic input. (Basically they'd prefer all apps run on Macs to come from the Apple Store...

That's great to hear but, for now, I'm stuck with a project to finish and have lost backwards compatibility with that!
