But this MP3 export thing is really making me doubt Audacity's interest in being useful to me as a professional musician. Not having that as a standard feature is a major hiccup in my workflow.

I just wanted to record drums for the metal album last, as they will be the most difficult, but because I wanna do all the other tracks for my acoustic album last, I am gonna have to do the metal first.
