USB devices have to be connected before launching Audacity, else you have to use Transport > Rescan Audio Devices in the Audacity menu. Thanks for all the detail but what are you actually trying to record - computer playback or the mic? Stereo mix is for recording computer playback without any inputs connected to the computer. Click in the waves where you want the start of the first pause to be.
Generate > Silence and choose 3 seconds.
Edit > Copy or CTRL + C.
Click in the waves where you want the start of the next pause to be.
Edit > Paste or CTRL + V.
Continue by clicking then pasting.
