Macs don't provide any level controls for most USB audio devices, which is why the Audacity recording level slider is greyed out.
Does your Mac have a stereo Line-in? If so, can you use analogue outputs from the Pioneer device to connect to stereo Line-in?

If you use Adobe Acrobat you may be able to save the site http://manual.audacityteam.org/ as a PDF. The PDF may not have all the features of the HTML pages such as clickable image maps or tooltips. Then you can print the PDF if you have enough ink - there are over 250 pages.

Have you tried the Windows 7 audio troubleshooter to see if it can fix the balance being uncentred when set to centre? Look in the Windows Control Panel under Hardware and Sound and select "Troubleshoot audio playback". Are you sure the problem is not with your computer speakers or whateve...
