It is certainly "historical" - 1.0.0 only had "New Audio Track" so that concept was not renamed when adding a menu item to add a stereo track.
I don't think it very important but I agree it would be more consistent to change it to "Mono Track".

Only you can test the "optimum value" but as a suggestion, test with music recordings into line-in at home and set the buffer as low as it will go while still recording the music properly. You can then try keeping that setting for church. If that setting is too low, you can turn it up agai...

There should be no harm in a buffer setting of 75 if that prevents the problem. Many users on Mac have to reduce that setting.
