The most likely explanation is that you installed Norton or some other cleanup application and are allowing it to delete your recorded files in the Audacity temporary folder. In the Audacity menu, choose Edit > Preferences... then "Directories" to see the location of your Audacity temporar...

Please give your version of Audacity and Windows (see the pink panel at the top of this page). Yes although it is hardly a good solution you can use the Audio Track Dropdown Menu to Split Stereo Track then delete the left channel's track. There is Effect > Clip Fix... which may help with reconstruct...

But you may know that Windows supports USB Audio Class 1 only so that 192 kHz is not possible. This is why up to 48 kHz our interface acts as a USB Audio Class 1 interface. However you can play the tune on your computer and record it into Audacity.
