How exactly does this headset connect to the Mac? Is it a USB headset, or does it have separate pink and green connectors, or is it a single plug connection into the headset port of the Mac? Look at Edit > Preferences... then the "Directories" section and make sure you have permission to write to the Audacity temporary directory and that it has sufficient space. Turn off any file cleanup applications that may be deleting files in Audacity's temporary folder. Norton is a known ...

That's a normal characteristic of MP3 encoding. As I'm sure you know, MP3 is lossy compression so there are changes... If it's a problem, use a different format.
