Audacity can record multiple channels if you have hardware that presents those channels as coming from the same device. That is often not the case on Windows.

All Audacity playback is mixed down to stereo or mono.

You can delay playback of an existing Audacity track by adjusting "Audio to buffer" in the Recording Preferences. However this does not work with Software Playthrough when recording because that latency is at a fixed amount you can't change. What is the goal you are doing this for? Gale

Try a much lower Audio to buffer in Audacity's Recording Preferences. Start from 0 ms. Go up in 10 ms increments until it records properly then use that lowest possible value.
