If you know where 2.0.6 is, quit it, then in the folder where it is, double-click "unins000.exe" to uninstall Audacity.

There is no need to save a project unless you want to. After Timer Record completes, just cancel the warning about save project or cancel the dialogue to choose the name of the AUP file. Then you can export.

It's called "U-Law". Choose "Other uncompressed files" then click the Options... button. Choose WAV (Microsoft) header and U-Law encoding. Choosing U-Law makes it 8-bit.
