I am not running Audacity from the DMG, and I am using the latest version of Audacity on OSX 10.6. Please, give us all three Audacity version numbers like we asked (look in Audacity > About Audacity...). When you save a project, all has to remain as it was when you saved it. The name of AUP file and _data folder must not change, the AUP file and _data folder must remain alongside each other, and the subfolder structure within the _data folder must remain unchanged. Also, do you have COMMAND + 1 and so on already chosen as extra shortcuts in the Mac Keyboard Preferences? If not, have you tried pressing the "Réglages par défaut" button in Keyboard Preferences, then OK? Otherwise you could try deleting all your Audacity settings by deleting the audacity...

I don't know if you are already using them, but there are plugins for removing mouth clicks and essing at the bottom of http://forum.audacityteam.org/viewtopic ... 09#p279309. You can run those on substantial stretches of audio (not necessarily the whole chapter at once).
