You are correct that you cannot pause then save or export. But you can use the "Play/Stop and Set Cursor" shortcut which is SHIFT + A by default. This will stop playback, but the editing cursor will move to the stop point so you can resume from there: http://manual.audacityteam.org/o/man/k...

Click in or DOWN arrow into the label Track then TAB into the next label or SHIFT + TAB into the previous label.

When you have tabbed into the label, press the Play button, or using the keyboard, UP arrow then SPACE. DOWN arrow to continue using TAB.
