The only thing I did see change was that Audacity now had a startup guide window, and was not fullscreen but was windowed, which I've never had before. Perhaps that is because you reset the Audacity preferences? If a residual part of Stereo Mix Plus is causing the problem then I would assume Audaci...

If you still need help, restart Audacity, attach the AUP file for the first project file that won't open, then also attach the log from Help > Show Log... so we can see what the errors are.

Repeat the restart of Audacity and as above for the other projects that won't open.

As Koz suggested in his last post, you are likely sending what you are hearing back to Audacity for recording. There may be a "Mix" button or similar that needs releasing on the mixer.
