What are you trying to record with the headset? If you are recording your voice, choose the external microphone input in Audacity's Device Toolbar , not stereo mix. If you are recording computer playback, the stereo mix input should work but if it does not, choose the Windows WASAPI method of record...

Did you restart Audacity after installing Soundflower?

There is other software you can use to record computer playback on Mac but it is not free. Just use your favourite search engine.
