No specific value - it depends on the input you are using and the strength of the input signal.

Adjust the recording level so that the loudest parts do not go above -6 dB on the recording meters.

There are not options showing in the dropdown box for the Mic. That explains the error you see. Audacity cannot record from non-existent audio devices.
