What is the three-digit version number of Audacity are you using (Audacity > About Audacity)? Have you changed any settings in Audacity? If you are using the current 1.3.13 Beta, try Transport > Rescan Audio Devices. Try 44100 Hz project rate bottom left of the Audacity window. If that does not help...

Turn Audio Cache OFF if you don't understand it. If you do not get recording problems with it off, then you don't need it. Is it a USB turntable? If so, try removing and reattaching the USB cable, try a new or shorter cable, and plug into a spare USB port, not a USB hub.
